8 ounces dry wide egg noodles, uncooked
2 Tbls Olive Oil
1 lbs boneless Colorado Natural Best Beef – New York Strip Steak trimmed of visible fat, cut into bite-size strips
1 medium onion diced
½ lbs sliced fresh mushrooms
2 cups beef broth
1 Tbls corn starch for thickening
2 Tbls tomato ketchup
½ cup sour cream
Cook noodles according to directions, omitting salt. Meanwhile, heat olive oil over medium high heat in large skillet. Add Colorado Natural Best Beef – cook for 5-7 minutes or until browned, add onion and mushrooms, cook 3-4 minutes or until tender and releasing juices. Reduce heat to medium , add beef broth and ketchup – stir until mixed well. Cook until bubbly – add corn starch to 2 tbls water to make a paste and add to mixture to thicken. Remove from heat and gently stir in sour cream. Divide noodles between plates and top with the beef mixture. Enjoy!
